Slow Cooked Camp Oven- Pancetta Pizza

Ingredients
• 1 x Cherry Tomatoes• 3x 10cm Round Pancetta Slices
• Parmesan
• Feta
• Oil
• Salt
• Fresh Rocket
• Oregano
Method
Preparation:• Spread base of pizza base evenly with the pasta sauce
• Tear up the sliced pancetta & place evenly around pizza
• Cut cherry tomatoes in half and place evenly on base
• Tear up & spread oregano all over pizza base
• Sprinkle fetta over the base
• Season with a touch of sea salt and cracked pepper
Cooking:
Pre heat camp oven on fire.
Take camp oven off the fire & put it just to the side of the fire.
Place a trivet inside the camp oven. (Keeps pizza off bottom of camp oven so the pizza base doesn't burn underneath)
Place an even pile of hot coals on the lid of the camp oven (About 1 small shovel in size) & place some around the bottom of the camp oven. It is usually a 65-70% of coals on top & 35-30% coals on bottom. You want to heat in the lid to do most of the work...but in the same token you want the base nice & crisp. It's all about trial & error.
Cook for about 15-20 minutes in camp oven (Once bottom of pizza base starts to crisp up & go brown)
Take out & tear up fresh rocket & place evenly over pizza.
Drizzle fresh oil over top of pizza & eat till you can not eat anymore!!
