Slow Cooked Beef Fettuccine Camp Style
Slow Cooked Beef on a bed of Fettuccine with Garlic, Thyme and Onion.Essentials

Ingredients
1 brown onion500g chuck steak or any braising beef
150g tomato paste
250ml red wine
150 ml of cream
3 garlic cloves
4 stalks of thyme
6 leaves of basil
500 ml of beef stock
Parmesan to grate
Oil 10ml
250g Fettuccine Pasta
Method
1. Add oil to medium hot camp oven, brown the beef in the bottom of oven sealing both sides, take out and slice in 2 cm strips
2. Chop onion garlic and thyme
3. Add onion garlic and thyme to camp oven and stir until onions go clear (don’t have the oven to hot)
4. Add tomato paste and stir for two minutes (wait till paste goes to a darker colour)
5. Add beef and stir for 1 minute
6. Add red wine and reduce by half
7. Add beef stock cover with lid
8. Allow to cook for 3-4 hrs, stirring occasionally trying to break the meat up with a wooden spoon as you go , keep an eye on the amount of liquid in there if you need to add a bit more stock or water to stop it from sticking then do so.
9. Once beef is tender enough that it is falling apart, add cream to beef dish.
10. Boil a billy of water & cook the fettuccine.
11. Add the drained cooked fettuccine to the camp oven along with the torn basil leaves add cracked pepper and salt to taste mix in and serve with some fresh grated parmesan.

Camping at Glastonbury this weekend and cooking it as main meal Sat night for our friends.
This one was great as well - will be keeping this recipe in the camper :-) A great "comfort" meal on a wet camping weekend (yes - having an OzPig makes camp oven cooking easy in the rain!)
