Australian Pork Cutlets with Grilled Haloumi & Fresh Figs

Ingredients
2 x 250g Australian Pork cutlets1 Lemon
60g Rocket
1 Fresh Fig
90g of Haloumi Cheese
10 mls of Balsamic Vinigar
10mls of Olive Oil
Pinch of Salt & Cracked Pepper
Method
1: Season pork cutlets evenly with olive oil, salt flakes and cracked pepper .
2: Slice lemon leaving about 2-3cm of the middle behind creating a lemon cheek
3: Wash rocket and spin dry and put aside ready to be dressed.
4: Slice fig in halve and drizzle top with olive oil.
5: Slice 90g of haloumi cheese into 4 thick even strips.
6: Cook pork cutlet over a hot grill turning once, when pork is almost cooked place figs on grill cooking bottom side first and then turning aftet a couple of minutes.
7: Drizzle a small amount of oil on grill and place Haloumi on there turning after ten to 15 seconds once it starts melting leave again for same period then place on top of pork fillet.
8: Dress rocket with olive oil and balsamic vinegar cracked pepper and a pinch of salt, place even amounts on both plates, place pork cutlets on rocket place the fig on top of the Haloumi drizzle with olive oil and crack pepper over the dish. Place lemon cheek on the side of the plate. Squeeze lemon over the dish before eating.
